Pretend you're making pancake batter:
4 eggs
1 cup milk
2 tbsp butter
1 cup flour
2 tbsp sugar
1/2 tsp salt
1 tbsp vanilla extract
pinch of cinnamon (add nutmeg if that's your thing)
The recipe is simple, but the execution of actually cooking the things takes practice. Basically, you should heat and prepare a pan with butter (high heat), then drizzle the batter in the center much like making a pancake; then swirl the concoction around so that it is as thin as you can get it. Use your fingers to peel up one edge once the first side is browned and flip the fucker.
I won't debate what to put in them; but, generally, some sort of jam/jelly/preserves is ideal. Or you can make your own fillings (won't get into that as that is another thread entirely).
Merry Christmas asshats!
