I have to make them for 5 people, so it works pretty well for me. No need to worry about flipping them over. I can make two, throw them on and while they are cooking, make two more.

We got the first one as a gift and the second one for $5 at a garage sale, so not much money out-of-pocket either.

I love quesadillas with Queso Oaxaca cheese. All the authentic Mexican joints near me use it.

Real easy. First, get some good corn tortillas, I like El Milagro personally. Then get queso chihuahua cheese, shredded or block. Put some oil in a frying pan (I use olive oil), then make the quesadilla. Comes out crispy and great.

Not gonna lie brett.... I've now made em dry and with oil and with butter and using butter or oil to kinda fry up the tortilla is much more enjoyable to me than doing it dry.

Might not be authentic.... but erthangs better wit butter lol

mine as well cook it in bacon grease too.

you can get a nice crunch on a hot griddle, you are pre-heating right?

You definitely can get solid crunch cooking it dry. But the greased version is just a different kind of crunch ya know?

Yeah I pre-heat whatever I am cooking them on.... lol last time I made them I literally buttered the outside of the tortilla shell.... was delicious

I like the corn ones in fat, the flour ones on a dry skillet. I'm a flipper not a folder, too.

Flour is really good, and I prefer them for general tacos, but for the right crunch on a quesadilla, corn + oil dominates all. Using olive oil or peanut oil is a healthier option than plain vegetable oil as well. Just trust me, I'm an authentic Americanized Mexican.

san luis potosi is my wife and her family. And I am mastering most of their recepies :)

Sorry, no oil. It's just not needed at all.

Depending on where you are in Mexico it's either Corn or Flour. I can do either, but a quesadilla is usually flour for me.
