My recipes:

Easy chili sauce:

Ingredients:

1/4 cup chili powder. This is the most important part. Use actual powder from ground up chilis and not "chili seasoning" powder. Look for hatch or california chili powder. Look in the mexican spices in a bag section. If you can find santa cruz brand, they have the best chili powder ive seen in a regular grocery. If you get into makin this stuff, look for better and better chili powder. I order mine from hatch, nm .

2 1/2 cups water (add more to thin if you want)
~1 tablespoon beef or veggie bullion
4 tablespoons flour
5 tablespoons oil
~1 teaspoon cumin
~1-2 teaspoons garlic powder (or more)
buncha salt or seasoned salt

Directions:

Heat oil
Stir in flour and cumin and heat on low ~ 1 min
Add Chili powder
Add water
Turn heat up to ~med
Whisk until you have broken up/dissolved the chili powder
Add remaining ingredients
Simmer lightly until you reach desired thickness. Add water if needed.

As for chilaquiles, technically is like poor man's breakfast. The idea is to kinda throw whatever leftovers you have on a plate, add come chips or pan fried corn tortilla strips, dump chili sauce all over the top, and a couple fried eggs on top.

But if you are planning to make it, here is how I do,

for 2 people...

Cut 5-6 little corn torts in to short strips. Toss em into a big frying pan with hot oil in it. Fry the fuckers up, fliping/stirring often
Add some chorizo, keep frying
Add some onion, keep frying
When that stuff is cooked, put it in some bowls.
Next heat some black beans and rice (try not to mix em).
Add it to the bowls, on top of the fried tortillas
Then fry an egg, 1 for each bowl. Put the egg on top. Over easy is best.

Finally, and most importantly, drown that shit in chili sauce. Maybe sprinkle some cheese on top (queso fresco if you got it).

Every time I've had this they make it with scrambled eggs, refritos, shredded chicken, and top it with melted oaxaca, cotija, or queso quesadilla (never seen them use queso fresco, but I guess you could).

I once had a burger that was server with an english muffin bun with a poached egg and holandaise on top. Best burger I ever had in my life. It was fucking incredible.
