Turkey has been brining since last night. Will do traditional herb stuffing maybe with apples, raisins or cranberries (or all 3). Will go low and slow for @ 4 hours then turn up the heat to brown the skin up nice in the Roasting oven

I deep fried a turkey at work last Thursday so we're not going to have any at our house tomorrow. That's too much thanksgiving







































LOL, sorta kidding. We're going to some friends' house tomorrow who are having mexican for thanksgiving. He is Mexican and his wife is uber-pregnant so they're having dinner at their place, it's just mexican food instead of traditional thanksgiving fare. I can't wait though, I fucking love mexican food

I gotta say, the Mexican thanksgiving was pretty awesome. All we were responsible for was a side, an appetizer, & a dessert but we were still prepping and cooking all day. Instead of buying pre made food we decided to make everything from scratch and we underestimated how much work that would be. Don't care though, food and company was incredible and the Bears won.

Grilled it. Coated with my own proprietary rub. Smoked with cherry chips soaked in wine. Had a freak pirex dish explosion after carving half of it! Fortunately there was another half. Yum!

My only reasonable contribution to anything having to do with turkey is this: brine that shit for at least 24 hours. Don't care what recipe you use, how you cook it, if you fuck it prior...just soak that shit in some salt water (at the minimum). Hope everybody had a good holiday!

Cooked 2 turkeys for Turkey Day.
The one pictured was grilled for 3.5 hours at 350 degree heat.
Brine consisted of:
2 gallons water
1 cup salt
2 cups brown sugar
4 teaspoons crushed black pepper
1/2 bottle of wine
1 cup of fruit punch
5 bay leaves
2 tablespoons of garlic

Soaked half a bag of apple wood chips and added them as I put the turkey on.
Collected the drippings and made a gravy.
