We are going to visit friends this weekend and he has a smoker. Besides brats and Italian sausages, we want to bring some fish to smoke but my friend doesn't like salmon. What is another fish that comes out good when smoked?

Catfisch?

That was my thought, but I've never tried it smoked. I assume it would be great, but I thought I'd ask rather than be disappointing.

Haddock, trout, cod (sable fish), sea bass. Oysters kill also.

I picked up an Ahi Tuna steak for now, Jewels doesn't have much of a selection.

Smoke fish in a smoker, don't know if it will be good for anything else but fish.... fish is pretty strong and may affect any other meats you smoke in it.

<<<< 2 smokers, 1 for fish, one for everything else.

Granite ware roasting pan + flat roasting rack + aluminum foil

You're welcome. I got rid of a smoker years ago because I simply didn't use it enough to justify the space and albeit small amount of maintenance. If you just want to smoke something twice a year, the roasting pan method is great. Not a big difference between the $40 solution vs the $300-1000 solution unless you want to smoke in high volumes, as far as the final product. Cheaper solutions exist too, but anyone can do one of these with no fabrication.

Good tips. We are supposed to go there tomorrow again (weather permitting). He's got a nice smoker, but don't know if we'll bother if the weather is iffy.
