Hatch reds too. I think the reds have more flavor. Greens have more subtle flavor, but more spicy imo

I put a green pepper in mine. Not sure what the purists have to say about that. I normally omit cumin, because then you're getting close to taco taste territory. If I did, it would only be a little...but to each their own.
