I mean a lot of places use it 'cause it's very convinient:good meltage, iconic taste on top of being pretty cheap. You can get similar effect with Montrey Jack I'd say. At home I usually opt for a mix of Montrey+Cheddar, works pretty good. I know some burger joints that would imitate Kraft...
