Best chips for Chilaquiles?

Stale chips?

Stale hard shell taco shells?

fresh chips, just put them in late in the simmering?

El Milagro, those really THICC chips?

I want a nice mix of soggy and crispy chips maybe do a blend?

Also, how do you like your HUEVOS in there? I do sunny side up but do any of yall do scrambled? with cheeze?

I usually go stale, but a blend of textures sounds like a great fucking idea.

Scrambled eggs just sounds weird. Need some yolk up in there. Sunny side, over easy or maybe over medium max IMO.

A few melted cheeses (cheddar, jack, etc) plus topped with some cotija crumbled on top is my jam.

I've only really made this a few times though, so there is definitely room for improvement. My normal breakfast egg based dishes are usually either huevos rancheros or shakshouka. I do love some chilaquiles though.

100 on the yolk. I was at a diner that asked me if I wanted them scrambled the other morning and was like wtf. Maybe they were doing eggs out of the carton because of the egg price hike @truthbedamned
