it was aight...wife and father in law did all the cooking this year. I had fried turkey and I don't think I'm ever going back to the regular turkey. I don't even fuck with turkey like that. Also smoked a ham. I guess it was double smoked since it came from the store already smoked to begin with. But they added spicy bbq seasoning to the ham and it was delish. Mac and cheese was decent this year. I think they experimented with some cheeses that I didn't care too much about.

That sounds fantastic. Scallops are so good when cooked perfectly, but they are tricky for me to get right on the stovetop. Sous Vide seems perfect for it before a quick sear.
I couldn't believe what I was watching. Good, nice sized scallops are expensive and seeing how perfect they came out blew my mind. I'll try to post a picture.

Is the McRib back full time now?
It seems like a nasty sandwich coming from McDernalds, but it is really tasty.

Reverse sear is when you smoke it to an IT of say 100-110 then put it on a hot grill and sear it to IT of around 135 for rare.
My sear techniques is to put coals in the weber coal starter upside down and start them. When they are fiery red I put my meat grate on top and then add the meat. How long per side do you think? I do steaks for about a minute on each side.

Never done it. I'd venture to guess about 90 seconds a side? Is there anything better that Prime rib with au jus and creamy horseradish?

I like a nice crust s I'd say 90 minutes per side after you've stuffed the meat with onions and bacon.

I like to sous vide at 145 Celsius for 3 hours, then sear in the microwave.

I am sure it works fine but the only thing I put in the microwave is my coffee to warm it.

Probably about the same. You are going to want to have your IT a little higher though probably if you are going to go for 60-90 seconds only I would probably have the center of the roast closer to 130 IT before you sear it.
