I love to cook. Here is a list of my recipes. Share your own.

1. Baked chicken

Ingredients

Cream of mushroom

½ cup butter

1 clove garlic

2 cups milk

2 tablespoons butter

½ tsp salt

2 cups mixed vegetables, chopped into bite-sized pieces (I used cauliflower, broccoli, carrots, broccoli, celery, leeks, onions, mushrooms, green beans, and mixed spinach.)

1 teaspoon ground black pepper

Instructions

Mix all ingredients for chicken breasts in a medium bowl.

Butter up the bottom and sides of a 9 x 13" baking dish. Pour in enough chicken to cover all the bottom.

Bake in a 325 degree oven for 15 minutes. The chicken will be golden brown on the top.

2. Peanut butter sandwich recipe -

Layer 1: Asiago, cheddar cheese, roasted corn & roasted peanuts

Layer 2: Onions, mushrooms, arugula, bacon & mayo

Layer 3: Bread, homemade Greek yogurt, cheddar & Swiss cheese

Layer 4: Oreo cookies, if you can handle that

Layer 5: Chips (any kind), lettuce & tomatoes, you are done

For me, that just feels right. Like I am in New Orleans or Miami or New York on vacation. I think that is pretty much the closest I get to the "tourist" that many restaurants and cuisine offer.

3. Bread dip


2 cups cooked oatmeal

1 small, sweet potato, diced

1 cup low sodium milk

3/4 cup unsweetened almond milk

2 tablespoons pure maple syrup

Pinch of cinnamon

Instructions

Dry your bread with a paper towel and place on baking sheet. Sprinkle with brown sugar and bake for 10-12 minutes or until golden brown. Meanwhile mix together milk, oats, milk syrup and almond milk. In a mixing bowl place a fork or whisk and mix in the sliced sweet potato, nuts and syrup. Once the sweet potato is melted and thickened you can scoop it onto the hot bread in an even layer. After your bread is nice and toasty remove it from the oven.

How do you pour chicken? Shredded?
We have most of those ingredients and I was thinking of making something like that.

How do you pour chicken? Shredded?
We have most of those ingredients and I was thinking of making something like that.

Ya gotta put the chicken in a blender bro. Then it will pour.

Easy peasy One pot Hawaiian chicken casserole;


2 lbs boneless skinless chicken breasts

One packet Canadian bacon

3 fresh pineapples

Dice up pineapples into bite sized chunks setting one pineapple's worth aside.

In a 9 by 12 baking dish, fan out Canadian bacon slices, then layer pineapple chunks overtop.

Next, butterfly the chicken so it is thin, layer over chunks.

Juice or pulverize remaining pineapple and pour over chicken to coat, seal with heavy duty aluminum foil.

Place inside fridge for 24 hours to marinate

NO PEEKING!

place inside 340 degree oven and bake for an hour.


Serve over rice or potatoes salad, with Hawaiian punch.
