Smaller bird, 15 lbs, spatchcocked and roasted over oyster dressing (oysters, andouille sausage, corn bread/sourdough cubes and stuffing veg)
green bean casserole - charred french gb and shishito peppers, white miso dressing and frizzled onions on top
hasselback potato gratin - Hasselback Potato Gratin Recipe
roasted delicata squash and apples
cranberry relish
Bulleit rye manhattans, various beer and vino
Dutch Apple pie

I keep wanting to try those potatoes, but am afraid of the dish washing after, and hard to make for one.

Been doing it for years

I spent most of my adult life avoiding traditional Thanksgiving dinners. I would do things like BBQ ribs or lasagna...so you still feast, but no turkey.

Then one year I got my hands on one of those good free range never frozen birds and decided what the hell...we go traditional this year.

That bird turned out so good that my wife won't let me go back to ribs.

We got a little 4x8 le cruiset baking dish just for that. Found it at goodwill for 8 bux. Butter the dish and it comes out clean.

Goodwill yes i love going there. Got to use you're imagination. Last week i picked up this metal ( chrome) tall paper towel holder. Not for using for paper towels i was thinking of using it for beer can like turkey , lol

Tell you what also SLAPS HARD for turkey leftovers:


Matty Matheson rules. I just sub out the chicken for chunks of leftover turkey. I used to make a turkey tetrazzini casserole with the leftovers but this is "healthier" I think.

I only make green bean casserole once a year. Excited that it is green bean casserole week:

Turkey, filet mignon (for the person who won’t eat turkey), mashed potatoes, gravy, green bean-likely in casserole form-, dressing, pumpkin and pecan pie (bought from local baker). Sort of boring this year it being a small crowd.

I did!

The wife was looking for chicken pot pie and that monster came up. A little much for me, but just watching him make it was wild!

At the risk of drawing ire from @HeHateMe , I tried this recipe with fresh green beans once, and I think that the French style canned ones work better for it. JMO.

My wife made a homemade green bean casserole with fresh green beans, fresh mushrooms...no cans or boxes of anything. People never really loved it.
